‘Afuera Hay Más’ is based on the idea that cuisine can be a way of connecting with the land.
Virgilio Martínez will take us on a culinary journey through the diverse regions of the Andes and the Amazon, showcasing three unique dishes. These dishes allow us to travel across altitudes, climates, and ecosystems. The presentation will explore identity and origin from the perspectives of the Andes and the Amazon. It will focus on ingredients that cannot be understood in isolation from their places of origin.
It will also demonstrate how observing and getting to know these regions can transform the way we cook. It is an invitation to look outwards and recognise that there is always more to discover.
