Madrid’s dynamism has made it one of the world’s most vibrant gastronomic ecosystems. However, it has also created growing pressure to stand out and capture people’s attention. Paco Roncero compares the city to a constantly growing mountain, the accumulation of expectations, investment and competition of which could turn it into a volcano and bring about changes in the sector.
In this context, projects that can maintain their identity, consistency and long-term vision are the ones that will survive; the challenge is no longer about opening, but about enduring. To achieve this, Madrid must learn to grow in a more sustainable way and build solid foundations.
