How to create a territorial identity

In this talk, the Jordán brothers will share their vision of gastronomy as a tool for reimagining a region's narrative.
They will explain how they have used cooking to take a fresh look at their surroundings, identifying the ingredients, flavours and techniques that truly form part of their identity. They will also reveal how they have incorporated these into a contemporary menu while preserving their essence.
They will also reveal the results of their research into some of the processes they carry out in the restaurant, such as enzymatic changes, fermentation and maturation. They aim to allow these processes to occur naturally, from additive-free curdling to techniques that draw out the full potential of a single ingredient. For example, they make broths from a single vegetable through fermentation, which concentrates and reveals all its aromas.
