Olleros will share his experience of the connection that links the Culler restaurant to its surroundings through its vegetable garden. This garden is like a living extension of the restaurant and allows the chef-forager to establish a direct link with nature.
While this approach presents logistical, creative and emotional challenges, it also offers a transformative opportunity: to cook with respect for cycles, the environment and people. They therefore take on the social responsibility of producing and providing food that is based on proximity, seasonality and utilisation, thus strengthening a cuisine that is connected to its territory and environmentally aware.
