From different perspectives, including politics, gastronomy and communication, participants in this roundtable discussion will analyse the current state of high mountain cuisine and attempt to define what constitutes high mountain cuisine. More importantly, they will consider what can be done to preserve it and develop it into a high-quality cuisine with a future.
