This Slovenian chef promotes a unique model of sustainability in his restaurant.
They actively involve local farmers in the day-to-day running of the restaurant, sourcing traditional, seasonal, organic ingredients from the local area. Together with the farmers, they are reviving forgotten dishes and ingredients, and developing new traditional products for the future. This helps to preserve their identity as a multicultural and diverse community, which is as important as biodiversity in nature.
They also cultivate their own gardens and greenhouses, coordinating with farmers on what to grow.
