Japan in the high mountains

Hideki moved from Mount Fuji to Montserrat, before heading for the Pyrenees and settling in Andorra. Drawing on his connection with the mountains, the Japanese chef will talk to us about his cuisine.
He will delve into the intricacies of Japanese cuisine, exploring the interplay of sweet and savoury flavours, the concept of umami (which he asserts is not exclusive to Japan), and the paradoxical simplicity and complexity of Japanese cutting and cooking techniques.
