Khinkali. A Georgian symbol of the sun

Chef Daduna Ghlonti introduces us to Georgian tradition and cuisine by sharing one of its most iconic dishes.
Khinkali, a traditional Georgian dish, stands out for its juicy filling, unique method of preparation and, most importantly, its ritual significance. To truly understand these deeper meanings, one must travel to the sacred lands of Pshavi-Khevsureti and Tusheti. Furthermore, when viewed from above, khinkali resemble borjgali, an ancient Georgian symbol of the sun associated with fertility and abundance. This further reinforces the idea that khinkali is not just a dish, but a sacred cultural emblem.
