Francis Paniego will present his current work at Echaurren at Andorra Taste.
At his restaurant in La Rioja, Paniego has organised his new menu into three sections. The first, Territorio, focuses on Ezcaray and La Rioja as vital spaces that influence his work. The second, Animal, features offal and game in many dishes, highlighting tradition and promoting sustainability. Finally, the third sequence, Memoria (Memory), reflects the fact that his cuisine always contains references to the past and to moments spent with his family, showcasing the most human side of cooking.
