Haute poaching

In a bid to retrieve the area's culinary history, Edorta Lamo will be telling us about his mountain's survival cookery. Cookery based on gathering, hunting and fishing. Necessarily poacher cuisine, amid much hunger, when the family had to put food on the table. 

But poaching was not without its moments of genius, and Lamo will be telling us how to develop it and turn it into haute poaching.
