Constancy, hard work and commitment have always been the watchwords during the trajectory of Paolo Casagrande.
Born in Italy and a cookery enthusiast from a very early age, Paolo Casagrande studied at the Alfredo Beltrame School of Catering in Vittorio (Veneto) in northern Italy. He worked at a number of major restaurants in Milan, London and Paris, until he joined Martín Berasategui in 2003 (Lasarte, Guipúzcoa).
Berasategui placed his trust in him to head up his restaurant in Tenerife, the M.B. at the Ritz-Carlton Abama. He later managed the opening of Castadiva Resort, a luxury hotel on Lake Como (Italy), but in 2012 he joined Martín Berasategui again when the chef asked him to run his restaurant in Barcelona, Lasarte. Since February 2016, Paolo has been running the entire gastronomic project for Berasategui at the Monument Hotel, the luxury hotel containing Restaurante Lasarte, Oria Restaurant and Hall0 Cóctail Bar.
