Master cheesemaker at Quesería Casa Raubert (Escàs, Andorra)
Casa Raubert is Andorra's leading cheese brand, and Pablo is its master cheesemaker.
From its origins in the 16th century, Casa Raubert was a traditional manor house working in livestock, agriculture, cattle trading and pasture-grazing. It has now become the only cheese factory in Andorra making artisan products. Pablo is one of its master cheesemakers, and carries on this tradition with the experience he acquired at a cheese outlet in La Seu d’Urgell (Lleida).
Casa Raubert cheeses are known as shepherd's cheese, because they are made exclusively with local sheep and cow milk. Casa Raubert's sheep are Assaf, one of the most highly prized and appreciated species due to the quality of their milk. Not only does the milk give their products a special taste, but it also contains 20% more omega-6 and fewer saturated fats.
