Dolors Pal & Josep M. Troguet
Chefs and owners at Borda Raubert (La Massana, Andorra)
She learned Andorra mountain cuisine from mother-in-law Dolors Ribes, who opened the restaurant she now runs with her husband, Borda Raubert.
A Catalan from La Seu d’Urgell, love brought her to Andorra, and family mapped out her way of life. She began work at Borda Raubert, which was run by the mother of her partner, Josep Maria Troguet Ribes. She learned the trade and the characteristics of mountain cuisine from mother-in-law Dolors Ribes, who after all was famous for her book of "borda" farm house recipes (high-mountain cuisine).
Pal now manages the Borda with her partner, farming out (pardon the pun) some of the typical recipes of these eateries, such as “trinxat” cabbage tortilla, meatballs or “escudella barrejada” meat and pasta stew. At Raubert, as in all "bordas", grilled fare is available as an adornment for all recipes.
